Is the health case for fruit and vegetables actually solid?
Yes. This is one of the better-evidenced findings in nutrition, which is not something you can say about most claims in this industry.
A large meta-analysis of prospective cohort studies found higher fruit and vegetable intake associated with significantly lower cardiovascular disease risk, with risk falling as daily intake rose. A separate pooled analysis of large cohorts found roughly five servings a day associated with the lowest all-cause mortality.
The caveat is real and worth stating: these are observational studies. They establish association, not proof of causation, and people who eat more vegetables tend to differ in other ways. Detox. Vegetables do not detoxify you; your liver and kidneys do. Eating well supports normal function. It does not perform a cleanse, and any product sold on that framing is selling a metaphor.
Single-ingredient miracles. Individual vegetables get marketed as cures on the back of small studies or cell-culture work that does not transfer to a person eating a normal portion.
