What is GoForFresh? Freshly Cut Vegetables and Fruits, Delivered Every Morning

Most households in India know they should cook more fresh vegetables. The obstacle is almost never knowledge — it is the twenty minutes of washing, peeling and chopping that stands between a bag of vegetables and dinner. That friction is why perfectly good produce goes soft in the back of the fridge, and why convenience food wins on a Tuesday night.

GoForFresh exists to remove that friction without asking you to give up freshness to get it. We deliver freshly cut vegetables and fresh cut fruits to your door every early morning, between 5 AM and 9 AM. Everything is washed, peeled and chopped within 15 minutes of the order leaving for delivery. Nothing is cut the night before. Nothing waits in cold storage for orders to come in.

Alongside the cut produce we sell ready-to-cook vegetable mixes portioned for specific dishes — poha, upma, sabzi, curry bases — plus pure ghee and staples sourced straight from farms.

There are no preservatives, no browning dips, no colour and no added sugar anywhere in the range. We do not need them, and that is a consequence of the operating model rather than a virtue we are claiming.

Because cutting is the moment a vegetable's clock starts running.

Cutting ruptures cells, exposes interior tissue to oxygen, and speeds up the enzymatic and respiratory activity that degrades vitamins, texture and colour. Research on fresh-cut produce finds that ascorbic acid — vitamin C — declines steadily through refrigerated storage after cutting, with the sharpest drop in the first days.

That has a blunt practical consequence. A pre-cut pack from a supermarket shelf and a vegetable cut this morning can look nearly identical in the packet and be materially different on the plate. The difference is not the knife. It is the days in between.

So we made the cutting window the hard constraint the rest of the business is built around: we hold whole vegetables, and cutting only begins once we know what is going out and where.

Two reasons, one practical and one physical.

The practical one: Indian kitchens cook in the morning. Vegetables that arrive at 6 PM have already missed the meals they were bought for.

The physical one: early morning is the coolest part of the day. Maintaining an unbroken cold chain after harvest slows respiration and enzymatic degradation, which preserves texture, colour and nutritional quality in fresh-cut produce. Delivering at 6 AM instead of 2 PM means freshly cut produce spends its most vulnerable hours in the coolest conditions available, then goes straight into your fridge.

We are not going to tell you that vegetables from us will cure anything.

What the evidence supports is broader and more useful: higher fruit and vegetable intake is consistently associated with lower cardiovascular disease risk and lower all-cause mortality across large prospective cohorts. Those are observational findings — strong and consistent, but association rather than proof of cause.

The honest version of our pitch is this: the health case for eating more vegetables is already well made, and the thing standing between most households and doing it is daily friction. We sell the removal of that friction, with produce that is genuinely fresh when it arrives.
