What happens to a vegetable the moment it is cut?

A whole vegetable is a sealed system. Cutting breaks that seal.

Three things start immediately. Ruptured cells release enzymes that were previously kept separate from their substrates, which begins browning and softening. Interior tissue is exposed to oxygen, driving oxidation of vitamins — vitamin C in particular, which is fragile and water-soluble. And the cut surface raises the rate of respiration, so the vegetable burns through its own sugars and reserves faster.

None of this is dramatic in the first hours. It becomes significant across days. That is why the practical question about cut vegetables is never "cut or whole" — it is "how long ago was this cut, and how cold has it been since".

How much nutrition does storage actually cost?

Enough to matter, and it compounds with temperature.

Post-harvest research consistently finds that the vitamin content of vegetables declines with storage duration, and that the rate of decline rises with temperature. Produce eaten closer to harvest retains substantially more of its vitamin and antioxidant content.

Vitamin C is the marker most often measured, partly because it is fragile enough to show differences clearly. It is a reasonable proxy for how well something has been handled overall: if the vitamin C has held up, the produce has not spent long in warm conditions.

This is the entire reason a supermarket pre-cut pack and a same-morning cut pack are different products. The pack has to survive central cutting, packing, transport, shelving and display time. Ours has to survive a few hours in a cold van before it reaches your fridge.

Because shelf life has to come from somewhere.

If a cut vegetable must look acceptable on day four, something has to hold back the browning and softening that would otherwise show. In practice that means acid dips, browning inhibitors, modified-atmosphere packaging, or all three. None of this is necessarily unsafe — it is standard food technology, and it exists to solve a genuine logistics problem.

We avoid the treatments by avoiding the problem. Cutting within 10 minutes of dispatch and delivering the same morning means the produce never needs to survive display time. There is no day four to engineer for.

How should you store cut vegetables at home?

Refrigerate immediately, keep them sealed, and cook them the same day where you can.

Put the pack in the fridge as soon as it arrives — not on the counter while you finish something else. Keep it toward the back rather than in the door, where temperature swings least. And where a dish allows it, cook the same day: every additional hour at a higher temperature costs texture and vitamin content, and the logic that drives our cutting window applies just as much in your kitchen as in ours.

A day in a cold fridge is not a disaster. Three days on a warm shelf is a different product.
