This is one of the areas where the evidence is genuinely strong rather than suggestive. A large meta-analysis of prospective cohort studies found higher fruit and vegetable consumption associated with significantly lower risk of cardiovascular disease, with risk falling as daily intake rose. A separate pooled analysis of large cohorts found intake of roughly five servings a day associated with the lowest all-cause mortality. These are observational studies, so they establish association rather than proof of cause, but the effect is consistent across populations and study designs. Is fresh always better than frozen?

Quick answer

Not always. Frozen produce is usually frozen soon after harvest and can retain nutrients well. Fresh wins when it is genuinely fresh โ€” the worst case is 'fresh' produce that has been stored for a week.

The honest answer is that the comparison people imagine is the wrong one. Frozen vegetables are typically processed and frozen soon after harvest, which locks in much of their nutritional content, and comparative work finds frozen produce can hold up well against fresh โ€” sometimes better than fresh produce that has been stored for a long time. What frozen cannot give you is the texture, flavour and eating quality of produce cut hours ago, and it usually cannot be used the way an Indian kitchen uses fresh vegetables.
